White never went to culinary arts school, college or had serious training. However, he grew up with his grandmother, who started Mrs. White’s Golden Rule Café in downtown Phoenix in 1964. White started from his grandmother’s recipe for fried chicken and he started experimenting with my his own spices over time.
Once he decided to go the culinary route, he needed money – and went the illegal route to get the funding he needed – this didn’t end well as he caught a case in 1997 and had to do a jail stint. From that point, White was determined to turn his life around. Once he was out, his focus was strictly on growing Lo Lo’s as a brand.
From the jail cell, he came up with Lo-Lo’s Chicken & Waffles. Lo-Lo was his street name. Five weeks after being released, he was selling chicken and waffles and he hasn’t looked back since.
His first restaurant was about 800-square feet and could fit about 20 people. When Phoenix had all-star games and Super Bowls, the lines would be hours long. Snoop Dog, Ice Cube, Shaquille O’Neal and Charles Barkley stared to become regulars.
It was Shaq who told White that he needed a bigger location because he kept hitting his head. It took a while, but he finally opened up a second location – and its been upwards ever since. He’s also the owner of popular eateries: Brunch & Sip and Monroe's Hot Chicken located in Phoenix.
